Once again it’s a matter of a lunch with friends, those with whom every year we promise to see each other shortly, but in the end we meet once a year … and it is an immense pleasure. Because in the end everything is concentrated in a lunch, time to take stock, to laugh, to joke … and drink good wine, sorry: excellent wine. Indeed I owe them my first discoveries of great Bordeaux … and the tradition continues.

This time they offer a Château Chasse-Spleen 2010, AOC Moulis-en-Médoc, assemblage of Cabernet Sauvignon (55%), Merlot (40%) and Petit Verdot (5%). No ranking from the classification of 1855, so no Grand Cru or Premier Cru … and the proof that one must never surrender to the label of a bottle of wine is precisely in this Bordeaux with such a superfine quality: the bouquet is very intense, of very long persistence, notes of cassis, roses, light cherry, very smooth, the tannins are now a low trace, excellent structure and well-balanced. Truly a fabulous Bordeaux.
It pairs well with white and red meats; in our case it happily accompanied us during a fondue chinoise, a very common dish in the Swiss Christmas holidays.

And we left with the promise that no, this time we will meet again soon … as per tradition.
