And everything, absolutely everything indicates the decisive, almost austere character of this wine:
– The grape: Cannonau in purity, autoctonous vine of the splendid Sardinian region
– The name: Dimonios. Title of the hymn of the Sassari Brigade, group of Italian Army composed entirely of Sardinians, solid and compact as they are
– The scent: intense, deep, ripe cherry, but also herbaceous and spicy
– The taste: irresolute, warm, impactful, full-bodied, notes of oak, licorice, vanilla. Here too the Sardinian earth is perceived and it persists for a long time, a flavor supported by the tannins that give vigor to the structure.
Only dishes with comparative strength can compete with the impetus of this wine: robust red meats, game, roasts, lamb and – if only we were on that island – a nice porceddu roasted on a spit.
