It happens that it is the departure day for a week’s holiday: just arriving at the airport and… the flight is cancelled.
This happened to our dear neighbors: quickly said, we need a restorative dinner. We make the food, they bring the nectar.
And voilà, a pasta with fish sauce (octopus and cuttlefish) cooked with strictly home-made tomato sauce, combined with a Saint-Aubin 1er Cru 2020 white wine from Domaine Gérard Thomas & Filles.
We are in the south of the Côte de Beaune, in Burgundy, where the best Chardonnays in the world are produced. And this Saint-Aubin leaves no doubt: the color is a crystalline golden yellow, the scent is persuasive, rich in citrus notes of lime and herbaceous notes of thyme and wild flowers.
On the sip, a perfect freshness and a typical minerality that the French describe as poudre à canon or pierre à fusil.
This Saint-Aubin 2020 is ready to serve, but it could easily wait another 5 years without losing its tone. It can undoubtedly be served with grilled chicken meat, smoked salmon, or goat cheeses, not too fresh.
In short, everything can be remedied… even when faced with a false start!
