We are in Switzerland, specifically in Valais, perhaps the most prolific canton in terms of Swiss wine production. And we are talking of great wines, coming from high altitude vineyards.

During the last event Caves Ouvertes des vins du Valais, among the many and remarkable wineries visited in the region, I stumbled upon Cave Gilbert Devayes in Leytron.
Therefore I want to describe their Païen that comes in a bottle with a simple, but very elegant white label with reliefs that remind me the hand-embroidered fabrics.

Païen – also called Heida (Savagnin blanc) – is an autochthonous grape of Valais. This bright straw white wine has a very delicate and balanced fruity aroma, but the note that strikes me absolutely is its aromaticity, like picking a bunch of thyme and rosemary with a touch of sage and also slightly minty: adorable. In mouth it is very fresh with a correct mineral touch (remember that we are talking about high mountain wines).

I really liked it. I strongly recommend it as an aperitif or with appetizers, salads and of course with the original Swiss fondue. Santé!
