Frankly, I am for the salty. And yet, when the time comes, you have to be ready…and let go.

We are at the end of a copious meal with friends, the ones you don’t see every weekend, so a lunch that starts at 12.30 and ends at 18.00 is, to say the least, “obvious”. And so a dessert wine is necessary, I would even say indispensable.

This Aleatico Passito dell’Elba DOGC, souvenir of a far holiday on the Island of Elba close to Tuscany, is what we need: with a tarte aux pommes home-made, the sweetness of this red passito wine is perfect, note of compote, extremely sweet and pleasant, even without any pairing for the famous purpose of “meditation”. But a meditation between friends, who are smiling and joking, who are sharing the difficult moments of the past months, but that gives hope for the months to come.

And everything seems more…sweet.
