About 12000 km is the distance between a typical dish of Piedmont, the “tajarin” (tagliatelle pasta) with porcini mushrooms and this wine coming from the Cordillera of the Andes.
Indeed the meeting between these two elements generates perfect symbiosis.
These home-made tajarin with a sauce based of porcini mushroom collected in Turin area are a classic dish in Northern Italy, in particular in my native Piedmont region, which excels with its red wines … Neverthless this Chilean wine Encanto, assembly of Carmenere, Cabernet Sauvignon, Syrah and Petit Verdot, produced in the Cachapoal valley which offers great red wines, about 70 km far from Santiago de Chile, has nothing to envy to a Barbera or Nebbiolo wines. In fact its aroma is very intense and harmonious, blueberries, raspberry, cherry. And in mouth a freshness together with a certain tannicity give excellent support to a persistent medium-long taste.
The body and the intensity of Encanto are in perfect balance with the tasty tagliatelle with mushrooms.
Thanks to the wine we can travel, we can have as unexpected as pleasant discoveries, and we are always surprised at how in the end the distances between continents are often only a matter of kilometers.
