This is the incipit signed by Samuel Beckett that you can find on the Ca ‘de Pazzi (“House of fools” in English) website. Madness in a liquid state: this is how this Franciacorta DOCG producers introduce theirselves, a concept born from the meeting of two young guys (innovative and “crazy” side) with some producers of Franciacorta (tradition and “knowledge” side).
Thus all their versions of Franciacorta range from Brut to Rosé to Millesimato, each of them with an original “pop” label: Rhino, Raffa, Ele, Zeno, all representing crazy animals that make you feel in a good mood just looking at them!

I tried Raffa, a Franciacorta Saten 100% chardonnay, 24 months of aging on the lees. I love the Saten and their velvet sensation of fine and non-aggressive bubbles, just as demonstrated by Raffa. Delicately citrusy, with hints of yeast and bread crust and supported by a marked freshness, this nice Franciacorta fits perfectly in aperitifs as well as pairing fresh goat or sheep cheeses. Ca ‘de Pazzi recommends it with Back to black by Amy Winehouse or reading The Great Gatsby by Scott Fitzgerald: brilliant!!
